*Monday is the day I stay home, get back into the swing of homeschool, and focus on my house cleaning. The first thing I do is put a whole fryer chicken or beef roast in the oven or crock pot. Then I pull out my blender and cutting board to prepare the sauces and other items I’ll need for the recipes I’m using that week. (Strawberry/Watermelon ice cubes, Spaghetti and Pizza sauce, BBQ sauce, cut up fruits and vegetables for snacks and to add to recipes later, and Hamburger patties or Meatballs. Recipes coming soon.)
*Tuesday is the day for appointments. I want quick, easy meals and putting a pan of water on the stove to boil for noodles, or throwing burgers/meatballs on the grill, under the broiler, or even in a frying pan is definitely easy. Put together a quick side salad and you’re set.
*Wednesday I clean out the refrigerator and make my shopping list. This is a wonderful day to use up leftovers so they won’t be taking up room for the groceries I’ll be bringing home on Thursday.
*Thursday is shopping day. My son and I get a treat by stopping at Subway for lunch first. We do not always do this, but it is a great option that makes healthy eating a lot more fun. It’s a little bit of a mind game too because you’re feeding that fast food monster that’s inside all of us.
*Friday is a wind down night for the weekend. If we didn’t stop at Subway on Thursday I will order out for pizza, but I recommend you spend a fun night making your own. All you have to do is add your favorite ingredients (vegetables that were cut up on Monday) and bake. How easy and fun is that?
*Saturday is my other big house cleaning day and the day I plan homeschool and/or blogging or writing for the next week. So, I put in a casserole or pull out the crock pot. We usually only have brunch and an early dinner on the weekend. I keep healthy snacks stocked up, and those Strawberry/Watermelon ice cubes are a great treat to curb the appetite in a refreshing, healthy way.
*Sunday is an open day to occasionally slip from the regular healthy eating routine. Sometimes the hardest thing to do is stick with something because you are constantly feeling deprived. So go ahead and eat out, but don’t get too carried away with unhealthy choices. Not only will it throw your metabolism for a loop, but it will make you sluggish for the week ahead.
That’s my week, and as promised here is a short list of pantry items I keep on hand. It’s not comprehensive, but it gives you some idea of how I frugally stock my pantry.
